Growing Conditions

Grillo Biotype A clone is planted on the high hillsides of the estate vineyard 'Paradiso', located in the small DOC of Contessa Entellina (Palermo) about 30 km from the Mediterranean coastline. The soil is calcareous with tuff. As with other native varieties, Grillo is very productive and benefits from attentive vineyard management with lowered yields and organic farming.

The area is noted for its many winds, each with its own name. The most influential is the strong 'scirocco' wind in the Spring, that brings rain with sand from the Sahara desert.


Floral and mineral, citrus fruits, fresh yellow fruit and savory elements


Vibrant with good weight and texture, citrus notes, mineral with good persistence.

Food Pairing

Pair with shellfish and spring and summer vegetable-based dishes. Enjoy with antipasti and fresh cheeses.


Aged in stainless steel tank on the fine lees for 6 months.
